Coconut Chutney


I tried Coconut Chutney many times.But it never turned out good.So This time I tried this recipe from my favorite food site vahrehvah.com.
And it turned out with awesome taste.The best ever chutney,I would say.
Here is the recipe.
Coconut Chutney

Khatta Dhokala


Yesterday I made Sponge Dosa.There was lot of leftover dosa batter.I was thinking what can I do with this batter.Then thought of making Khatta Dhokala.And It turned out with fantastic taste.
So,Here is the recipe.
Ingredients:
Sponge Dosa Batter
1-2 Tsp grated Ginger
2 Tsp Finely Chopped Green Chillies
2 Tsp Eno Fruit Salt/Cooking Soda
1-2 Tsp of coarsely crushed Black Pepper Powder
Salt as per Taste

*For Seasoning:
1 Tbsp Oil
1 Tsp Mustard seeds
1 Tsp Cumin seeds
1/2 Tsp Asafoetida
Curry leaves ( optional) 8-10

Direction:
1.In Dosa Batter, add green chillies,ginger,eno/Soda and salt as per taste and mix it well.
2.Heat the water in pressure Cooker.Grease the metal plate with oil and pour the Batter.And sprinkle some crushed Black Pepper.
3.Steam it for 15min.
4.Mean while make seasoning.In small kadai take oil,head it then add mustard seeds,cumin seeds,Asafoetida and curry leaves.When it crackle switch off the gas.
5.Once your Dhokala done,cut it in square shapes and sprinkle this seasoning on it .And serve it with Sweet Tamarind Chutney or Green Chutney.

Thalipith


Its Maharashtrian Dish.
Ingredients:
1 Cup Rice Flour
1/4 Cup Wheat Flour
1/4 Cup Gram Flour
1/4 Cup Bajari Flour
1 Tbsp Chilly Powder
1-2 Tsp Cumin Coriander Powder
1-2 Tsp Turmeric
2 Tbsp Oil
1-2 Tbsp Sesame Seeds
1/2 Cup Finely Chopped Cilantro
Water For Making Dough
Oil for Shallow Fry
Salt as per Taste

Direction:
1.Mix all ingredients together except water.Make dough by adding water.Make dough little soft than chapati dough.
2.Divide the dough in 5-6 equal balls.
3.On flat surface,take plastic bag.Apply some oil on plastic.Put that dough ball on that.Apply some oil to palm and make thalipith by gently pressing the dough by wet palm.And make 3 -4 small holes on Thalipith
4.Take hot griddle,apply some oil on that.Place the thalipith on hot griddle.
5.Roast the Thalipith on both by adding little oil till it become crispy on the both the sides.
6.Now it is ready to eat.Serve it with Curd or Butter.

P.S.-In this You can add Grated Cucumber,Radish or finely chopped Onion.

Mix Dal Dhokala



This recipe is again my mom's creation.
Ingredients:
1 Cup Rice
1/4 Cup Moong Dal
1/4 Cup Urad Dal
1/4 Cup Chana Dal
1/4 Cup Toor Dal
1-2 Tsp Grated Ginger
2 Tsp Finely Chopped Green Chillies
2 Tsp Eno Fruit Salt
Salt as per Taste

*For Seasoning:
2 Tbsp Cilantro Chopped
1 Tbsp Oil
1 Tsp Mustard seeds
1 Tsp Cumin seeds
1/2 Tsp Asafoetida
Curry leaves ( optional) 8-10

Direction:
1.Mix all Dals and rice together.wash it well.Soak in enough water for 7-8 hours.
2.Then Grind this mixture coarsely.Put for fragmentation for 8-10 hours.
3.Once it fragmented, then add Chopped ginger,Green Chillies,Salt as per taste.When you are about to steam the dhokala that time add Eno.
4.Heat the water in pressure Cooker.Grease the metal plate with oil and pour the dhokala batter.And sprinkle some chilly powder.
5.Steam it for 15min.

Instant Jeera Rice


This is my mom's recipe.
Ingredients:
2 Cup Cooked Rice
2 Tbsp Ghee
2 Tsp finely chopped Green Chillies
2-3 Tsp Cumin Seeds
2 Tbsp Finely Chopped Cilantro
Salt as per Taste

Direction:
1.In Kadai,take ghee.Heat it.Then add Cumin Seeds,when it crackle add chopped green chillies and then add cooked rice.Add Salt as per your taste.And mix it well.
2.Garnish it with Cilantro and serve it with Dal Fry.

Corn Bhel



Ingrdients:
1 Cup Sweet Corn
1/2 Onion Finely Chopped
1 Tomato Finely Chopped
1 Tbsp Lemon Juice
1 Tsp Chat Masala
1/2 Tsp Red Chilly Powder
Salt as per Taste
Cilantro for Garnishing

Direction:
1.Take a bowl,Mix all ingredients together and garnish it with Cilantro.
It's a very easy recipe.
