Mint-Coriender Rice



Ingredients:
1 Cup Basamati Rice
1/2 Cup Coriander
1/2 Cup Mint
1 Medium Onion finely chopped
1 Tsp Ginger Garlic paste
1 Lemon Juice
2 Tsp Cumin Seeds
1-2 Tsp Cumin-Coriander Powder
2-3 Green Chillies
2 Tbsp Oil
2 and 1/2 Cup water
Salt as per Taste

Direction:
1.In blender ,Take finely chopped onion,green chillies,Ginger Garlic paste,Coriander,Mint,Coriander-Cumin Powder.And make fine puree.If necessary add water.
2.Wash the rice.And apply lemon juice to washed rice.And keep aside.
3.In pan,take oil,heat it then add cumin seeds,when it crackle add puree.Saute it for 3-4 min.
4.Then add lemon juice coated rice in that puree.Mix it well.Saute it for 5-6min.
5.At this stage,add 2 and 1/2 hot water.And Cook till rice is well cooked.
6.Garnish it with coriander and serve it hot.

Nan-Katai



I learnt this recipe from one of my cousins Trishala.
Ingredients:
4 and 1/2 Cup All Purpose Flour/Maida
2 and 1/2 Cup Powdered Sugar
2 and 1/2 Cup Melted Ghee
1 Cup Gram Flour/Besan
1/2 Tsp Salt
1 Tsp Nutmeg Powder

Direction:
1.Preheat the oven for 320F.
2.Mix all ingredients together.Make smooth dough out of it.
3.Make small lemon shape balls.Press it gently.
4.Place it on Baking Sheet.Bake it in oven for 20-25 min.

Spicy Green Chutney

Ingredient:
1/2 Cup Mint Leaves
1/2 Cup Coriander Leaves
3-4 Green Chillies
1 Tbsp Lemon Juice
Salt to taste
Water

Direction:
1.Mix all ingredients together and blend it in blender.

Sweet Tamarind Chutney

Ingredients:
1/2 Cup Tamarind
1 Cup Jaggery
1 Cup Dates
2 Cup Water
1 Tsp Chilly Powder
1 Tsp Cumin-Coriander Powder
Salt to taste

Direction:
1.Take the seeds out of the Dates,And Soak the Dates,Tamarind in water for 2-3 Hours.
2.Boil the Dates,Tamarind together.If necessary add water.Then add Jaggery,Chilly Powder,Cumin-Coriander Powder and Salt.
3.Allow the cool the mixture.Then Blend it in blender.

Crispy Okra



Ingredients:
250gm Okra/Bhedi
1 large onion thinly sliced vertically
2 Tsp Chilly Powder
1 Tsp Sambar Powder
1 Tsp Chat Masala
1 Tsp Garam Masala
1 Tsp Turmeric
2 Tsp Cumin-Coriander Powder
1 Tsp Sugar
Salt as per taste
1/2 Lemon Juice

Ingredients:
1.Wash the Okra,Wipe it with cloth.
2.Cut it's head,And cut it vertically in four parts.
3.Preheat the oven at 275F.
4.Place the Okra on baking sheet,And sprinkle oil,And keep it in oven.
5.After 10-15min,Change the position of Okra like upside down.Do the same procedure after every 10-15min till it become crispy from both the side.
6.In a bowl,Take all spices that is Chilly Powder,Turmeric,Sambar Powder,Cumin-Coriander Powder,Garam Masala,Chat Masala,Sugar Salt etc.And mix it well.
7.In a pan take oil,Heat it,add thinly sliced onion and shallow fry it till it become golden brown
8.Then crispy okra in it.And sprinkle mixed spices and lemon juice over it.And mix it well.

Matar Paneer



It's my favorite recipe. I learnt this from my dear mom.
Ingredients:
1 Cup Frozen or Fresh boiled green peas
200gm (7 Oz) Paneer (Ricotta cheese) cut in 1 inch cube
2 Medium Onion finely chopped
3-4 Medium Tomatoes finely chopped
1 Tbsp Cashew Nuts
2 Tsp Ginger-Garlic Paste
2 Tsp Cumin-Coriander Powder
1 Tsp Turmeric
2 Tsp Chilly Powder (Red Thai Pepper Powder) If u want spicy u can add more)
1/2 Tsp Garam Masala (Spices Powder from India)
1 tsp Cumin Seeds
Salt as per taste
2 Tbsp oil

Directions:
1. Take oil in a pan and heat it. Then add onion, Sauté it till golden brown color. Add ginger-garlic paste, cashew nuts and again sauté it for 3-4 min.
2. Turn off the gas and allow the mixture to cool. Then blend it till it become fine gravy (paste). Keep this gravy aside.
3. Now blend the chopped tomatoes in blender and make fine puree.
4. Take oil in a pan and shallow fry the paneer cube till it becomes golden brown. Place it on paper to absorb the extra oil.
5. In the same pan, take little oil, add cumin seeds. When it crackles, add gravy. Cook it for 2-3min. Then add tomato puree, mix it well and cook it for 4-5min.
6. Add all spices like - Chilly Powder, Turmeric, Garam Masala, Cumin-Coriander Powder, salt and mix it well. Cover the pan with lid and cook it for 4-5min.
7. Add Boiled green peas, and fried paneer cube. Cover it with lid and cook it for 5-6min.
8. Garnish it with Cilantro and serve it with Chapati/Naan (Indian Bread).

Instant Corn n Peas Pulav



This recipe is my own creation.
Ingredients:
2&1/2 Cup Cooked Plain white Rice
1/2 Cup Boiled Corn
1/2 Boiled Green Peas
2 Tsp Oil
2 Tsp Any Brand Biryani Masala
2 Tsp Cumin Seeds
2 Tsp Finely Chopped Green Chilly
Salt as per Taste
Cilantro for Garnishing

Direction:
1.In Pan take.Heat it add cumin seeds.
2.When it crackle,add chilly,Boiled Corn,green peas and Biryani masala.And mix it well.
3.Then add cooked rice and salt as per taste.And mix it well.
4.Add Cilantro on top of the pulav for garnishing.
